Oatmeal, Apple, and Carrot Cake

A moist, naturally sweetened cake packed with fiber, fruit, and veggies—perfect for breakfast or a healthy snack!


Ingredients

  • 2 medium apples (peeled & grated, ~1 cup)

  • 2 medium carrots (grated, ~1 cup)

  • 2 eggs

  • 1 cup (90g) rolled oats (or quick oats)

  • ½ cup (60g) whole wheat flour (or all-purpose)

  • ⅓ cup (80ml) maple syrup or honey

  • ¼ cup (60ml) melted coconut oil or butter

  • 1 tsp cinnamon

  • ½ tsp baking powder

  • ½ tsp baking soda

  • Pinch of salt

  • 1 tsp vanilla extract (optional)

  • Handful of walnuts or raisins (optional)


Instructions

1. Prep the Batter

  1. Preheat oven to 350°F (175°C). Grease a loaf pan or line with parchment.

  2. In a bowl, mix grated apples, carrots, eggs, maple syrup, and oil.

  3. In another bowl, combine oats, flour, cinnamon, baking powder, baking soda, and salt.

  4. Fold dry ingredients into wet until just combined. Add vanilla or mix-ins if using.

2. Bake

  • Pour batter into the pan. Bake 40-45 mins until a toothpick comes out clean.

  • Let cool 10 mins before slicing.


Tips

🍏 Texture: For extra moisture, squeeze excess liquid from apples.
🌾 Gluten-free? Use oat flour instead of wheat.
🔥 Storage: Keeps 3 days at room temp or freeze for later!
