Chicken Alfredo Lasagna Roll-Ups

Creamy, cheesy, and packed with flavor—these roll-ups are a fun twist on classic lasagna! Perfect for a cozy dinner.


Ingredients

  • 8 uncooked lasagna noodles

  • 1 cup (100g) freshly grated Parmesan cheese

  • 1 cup (250g) whole milk ricotta cheese

  • 3 cups (340g) shredded mozzarella, divided (2 cups inside, 1 cup on top)

  • 2 cups (280g) cooked shredded chicken (rotisserie works great!)

  • ½ tsp Italian seasoning

  • 1 (15 oz) jar Alfredo sauce, divided (¾ cup inside, rest for topping)

  • Salt & pepper, to taste

  • 2 tbsp chopped parsley (optional garnish)


Instructions

1. Prep Noodles & Filling

  1. Cook noodles al dente (1-2 mins less than package instructions). Drain, rinse with cold water, and lay flat on parchment paper.

  2. Mix filling: In a bowl, combine ricotta, 1 cup mozzarella, Parmesan, chicken, Italian seasoning, ¾ cup Alfredo sauce, salt, and pepper.

2. Assemble Roll-Ups

  1. Spread filling: Divide mixture evenly over noodles (about ¼ cup per noodle), leaving a 1-inch border at one end.

  2. Roll up tightly from the filled end. Place seam-side down in a greased 9×13-inch baking dish.

3. Bake

  1. Top with sauce: Pour remaining Alfredo sauce over roll-ups. Sprinkle with 1 cup mozzarella.

  2. Bake at 375°F (190°C) for 20-25 mins, until bubbly and golden.

  3. Broil 1-2 mins for extra crispiness (optional).

4. Serve

  • Garnish with parsley and extra Parmesan. Serve with garlic bread or a crisp salad!


Tips

🔹 Make ahead: Assemble, cover, and refrigerate overnight. Bake when ready!
🌿 Add veggies: Spinach or sautéed mushrooms mix well into the filling.
🔥 Extra saucy? Thin Alfredo with ¼ cup milk if needed.
