Ultra-Moist Banana Bread Recipe

Prep Time: 10 mins | Cook Time: 50-60 mins | Total Time: ~1 hour
Servings: 1 loaf (8-10 slices)

Ingredients:

  • 1½ cups (200g) all-purpose flour (maida)

  • 2-3 ripe bananas (mashed, ~1 cup) – the riper, the sweeter!

  • 2 eggs (room temperature)

  • ⅓ cup (75g) melted butter (or neutral oil)

  • ¼ cup (50g) brown sugar (for moisture + caramel notes)

  • ½ cup (100g) sugar (adjust to taste)

  • ½ cup (120ml) milk (whole or plant-based)

  • 1 tsp (4g) baking powder

  • 1 tsp (5g) baking soda

  • ¼ tsp cinnamon powder (optional but recommended)

  • 1 tsp (5ml) vanilla essence

  • ¼ tsp salt

Optional Add-ins:

  • ½ cup chopped walnuts/pecans

  • ½ cup chocolate chips

  • 1 tbsp flaxseeds (for fiber)


Instructions:

1. Prep the Batter:

  1. Mash bananas in a bowl until smooth (small lumps are okay).

  2. Whisk wet ingredients: Add melted butter, eggs, both sugars, milk, and vanilla. Mix well.

  3. Sift dry ingredients: In another bowl, combine flour, baking powder, baking soda, cinnamon, and salt.

  4. Combine: Gently fold dry ingredients into wet mix until just combined (overmixing = dense bread).

  5. Add-ins: Stir in nuts/chocolate if using.

2. Bake:

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.

  2. Pour batter into the pan and smooth the top.

  3. Bake 50-60 mins until a toothpick inserted comes out clean (cover with foil at 40 mins if top browns too fast).

3. Cool & Serve:

  • Let cool in the pan for 10 mins, then transfer to a wire rack.

  • Slice once fully cooled (if you can wait!).

🍌 Bananas: Use overripe (black-spotted) bananas for maximum sweetness and moisture.
🔥 Even Baking: Rotate the pan halfway through baking.
🌡️ Don’t Overbake: The bread continues cooking slightly out of the oven.
🧈 Butter vs. Oil: Butter adds flavor; oil makes it moister (replace 1:1).
🍫 Variations: Swirl in peanut butter or add a streusel topping!
