Stupid Pie – So Easy, It’s Almost Silly!

Posted on May 1, 2025

😂🥧 Stupid Pie – So Easy, It’s Almost Silly!

This pie is ridiculously simple to make—just mix, pour, and bake! A gooey, nutty, coconut-chocolate delight that’s impossible to mess up.

📝 Ingredients:

  • 1 pre-made pie crust (or homemade)

  • 1 cup shredded coconut (sweetened or unsweetened)

  • ½ cup chopped pecans (or walnuts)

  • 1 cup sweetened condensed milk

  • 2 large eggs

  • ½ cup melted butter

  • 1 tsp vanilla extract

  • ½ cup chocolate chips (or butterscotch chips for a twist!)

🍴 Instructions:

1. Prep the Crust

  • Preheat oven to 350°F (175°C).

  • Place the pie crust in a 9-inch pie dish (no need to pre-bake).

2. Mix the Filling

  • In a bowl, whisk together:

    • Sweetened condensed milk

    • Eggs

    • Melted butter

    • Vanilla extract

  • Stir in:

    • Coconut

    • Pecans

    • Chocolate chips

3. Bake to Golden Perfection

  • Pour filling into the pie crust.

  • Bake for 35–40 mins until the center is set (no jiggle!) and the top is golden.

4. Cool & Serve

  • Let cool at least 30 mins (it firms up as it cools).

  • Slice and enjoy warm or at room temperature!

💡 Pro Tips:

✅ Extra decadent? Drizzle with caramel sauce or top with whipped cream.
✅ Nut-free? Skip pecans and add extra coconut or oats.
✅ Make ahead? Stores well 3 days at room temp (cover loosely).

It’s called “Stupid Pie” because it’s stupid easy—but stupid delicious too! 🤪🍫

Perfect for last-minute guests, potlucks, or when you just need a no-fuss dessert. Want a variation? Try swapping chocolate chips for white chocolate + dried cranberries! 🎄✨
