Ingredients:

1 box scalloped potatoes (with seasoning packet)

1 lb ground beef

1 onion, diced

1 can cream of potato soup

6 slices bacon, cooked & crumbled

1½ cups shredded cheese (cheddar or Colby Jack)

1 tsp garlic powder (optional)

Salt & pepper to taste
Instructions:

Prep the Potatoes:

Preheat oven to 375°F (190°C).

In a greased 9×13″ baking dish, layer the dry scalloped potatoes (reserve seasoning packet).

Cook the Beef:

In a skillet, brown ground beef and onion over medium heat. Drain fat.

Stir in seasoning packet from the scalloped potatoes (or use garlic powder, salt, and pepper).

Assemble the Casserole:

Spread the beef mixture over the potatoes.

Pour cream of potato soup (undiluted) evenly on top.

Add 2 cups hot water (or as directed on the scalloped potato box).

Sprinkle with bacon and cheese.

Cover with foil and bake for 30 mins.

Uncover and bake 15–20 mins more until bubbly and golden.
