Fluffy Buttermilk Pancakes 🥞✨

Light, airy, and perfectly golden—these homemade buttermilk pancakes are the ultimate breakfast comfort food!


Ingredients (Makes ~12 pancakes):

  • 2 cups all-purpose flour

  • 2 tbsp sugar

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • 2 cups buttermilk (room temp)

  • 2 large eggs

  • ¼ cup unsalted butter, melted (plus extra for griddle)

  • 1 tsp vanilla extract (optional, for extra flavor)


Instructions:

1. Mix Dry Ingredients

In a large bowl, whisk together:
Flour, sugar, baking powder, baking soda, and salt.

2. Combine Wet Ingredients

In another bowl, whisk:
Buttermilk, eggs, melted butter, and vanilla (if using).

3. Make the Batter

  • Gently fold wet ingredients into dry until just combined (small lumps are okay—overmixing = tough pancakes!).

  • Let batter rest 5–10 mins (for fluffier texture).

4. Cook to Golden Perfection

  • Heat a nonstick skillet/griddle over medium-low heat. Lightly butter.

  • Pour ¼ cup batter per pancake. Cook until bubbles form (~2–3 mins), then flip and cook 1–2 mins more.

5. Serve Warm

  • Stack high and top with maple syrup, fresh berries, whipped cream, or extra butter!


Pro Tips for the BEST Pancakes:

✅ No buttermilk? Make your own: 2 cups milk + 2 tbsp lemon juice/vinegar (let sit 5 mins).
✅ Extra fluffy? Separate eggs—whip whites to soft peaks, then fold in at the end.
✅ Keep warm? Place cooked pancakes on a baking sheet in a 200°F (95°C) oven while finishing batches.
