Cheddar Chive Mashed Potato Cakes 🧀🥔

Crispy on the outside, creamy on the inside, and packed with cheesy, herby goodness—these mashed potato cakes are the perfect way to use up leftover mashed potatoes!


Ingredients:

  • 2 cups cold mashed potatoes (preferably thick, not too creamy)

  • 1 cup shredded cheddar cheese

  • ¼ cup chopped fresh chives (or green onions)

  • 1 large egg, beaten

  • ½ cup all-purpose flour (plus extra for coating)

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp salt (adjust to taste)

  • ¼ tsp black pepper

  • 2 tbsp butter or oil (for frying)

Optional Add-Ins:

  • 2 tbsp cooked, crumbled bacon

  • 1 tbsp sour cream (if mixture is too dry)


Instructions:

1. Mix the Potato Mixture

  • In a bowl, combine mashed potatoes, cheddar cheese, chives, egg, flour, garlic powder, onion powder, salt, and pepper.

  • If the mixture is too wet, add 1-2 tbsp more flour. If too dry, mix in a little sour cream.

  • (Optional: Stir in bacon for extra flavor.)

2. Shape the Cakes

  • Scoop about ¼ cup of the mixture and form into ½-inch-thick patties.

  • Lightly coat each patty in flour (helps with crispiness).

3. Fry Until Golden

  • Heat butter or oil in a skillet over medium heat.

  • Cook patties for 3-4 minutes per side, until golden brown and crispy.

  • Avoid flipping too early—let them set first!

4. Serve Warm

  • Enjoy with sour cream, extra chives, or a drizzle of hot sauce!


Tips:

✅ Best with chilled mashed potatoes (freshly made can be too soft).
✅ Make ahead: Shape and refrigerate for up to 24 hours before frying.
✅ Baking option: Brush with oil and bake at 400°F (200°C) for 20-25 mins, flipping halfway.
