Ingredients:
For the Crust:

1 ½ cups graham cracker crumbs (~1 package)

2 tbsp sugar

½ cup butter, melted
For the Cheesecake Filling:

4 (8 oz) packages cream cheese, softened

1 ¼ cups granulated sugar

1 tsp vanilla extract

4 large eggs

⅔ cup sour cream
-
⅔ cup heavy cream
For the Strawberry Sauce:

2 cups fresh strawberries, hulled & chopped

¼ cup granulated sugar

1 tbsp lemon juice
-
1 tsp cornstarch (optional, for thickening)
Instructions:
1. Prepare the Crust:

Preheat oven to 325°F (160°C).

Mix graham cracker crumbs, sugar, and melted butter until combined.

Press firmly into the bottom of a 9-inch springform pan.

Bake for 10 minutes, then let cool.
2. Make the Cheesecake Filling:

Beat cream cheese and sugar until smooth.

Add vanilla, then eggs one at a time, mixing well after each.

Stir in sour cream and heavy cream until creamy.

Pour filling over the crust and smooth the top.

Bake for 50–60 minutes (center should slightly jiggle).

Turn off the oven, crack the door, and let it cool for 1 hour.

Chill in the fridge for at least 4 hours (preferably overnight).
3. Make the Strawberry Sauce:

In a saucepan, combine strawberries, sugar, and lemon juice.

Simmer over medium heat for 8–10 minutes until strawberries soften.

For a thicker sauce, mix 1 tsp cornstarch with 1 tbsp water and stir in.

Cool, then blend if desired for a smoother texture.
4. Serve:
