Cheesecake with Strawberry Sauce

Cheesecake with Strawberry Sauce 🍰🍓

Ingredients:

For the Crust:

  • 1 ½ cups graham cracker crumbs (~1 package)

  • 2 tbsp sugar

  • ½ cup butter, melted

For the Cheesecake Filling:

  • 4 (8 oz) packages cream cheese, softened

  • 1 ¼ cups granulated sugar

  • 1 tsp vanilla extract

  • 4 large eggs

  • ⅔ cup sour cream

  • ⅔ cup heavy cream

For the Strawberry Sauce:

  • 2 cups fresh strawberries, hulled & chopped

  • ¼ cup granulated sugar

  • 1 tbsp lemon juice

  • 1 tsp cornstarch (optional, for thickening)


Instructions:

1. Prepare the Crust:

  • Preheat oven to 325°F (160°C).

  • Mix graham cracker crumbs, sugar, and melted butter until combined.

  • Press firmly into the bottom of a 9-inch springform pan.

  • Bake for 10 minutes, then let cool.

2. Make the Cheesecake Filling:

  • Beat cream cheese and sugar until smooth.

  • Add vanilla, then eggs one at a time, mixing well after each.

  • Stir in sour cream and heavy cream until creamy.

  • Pour filling over the crust and smooth the top.

  • Bake for 50–60 minutes (center should slightly jiggle).

  • Turn off the oven, crack the door, and let it cool for 1 hour.

  • Chill in the fridge for at least 4 hours (preferably overnight).

3. Make the Strawberry Sauce:

  • In a saucepan, combine strawberries, sugar, and lemon juice.

  • Simmer over medium heat for 8–10 minutes until strawberries soften.

  • For a thicker sauce, mix 1 tsp cornstarch with 1 tbsp water and stir in.

  • Cool, then blend if desired for a smoother texture.

4. Serve:

  • Drizzle strawberry sauce over chilled cheesecake slices.

  • Garnish with fresh strawberries if desired.
