Cheesy Ground Beef Stroganoff Pasta Casserole 🍝🧀🍖

Ingredients

  • 1 lb (450g) ground beef (or ground turkey)

  • 1 onion, diced

  • 2 cloves garlic, minced

  • 1 can (10.5 oz) cream of mushroom soup (or homemade substitute*)

  • 1 cup sour cream (or Greek yogurt for tang)

  • 1 tbsp Worcestershire sauce

  • 1 tsp paprika (smoked or sweet)

  • ½ tsp black pepper

  • ½ tsp salt (adjust to taste)

  • 8 oz (225g) egg noodles or pasta of choice, cooked al dente

  • 1 ½ cups shredded cheddar cheese (or Monterey Jack)

  • ½ cup grated Parmesan cheese

  • 2 tbsp butter, melted

  • ½ cup panko breadcrumbs (for crunch)

  • Fresh parsley, chopped (for garnish)

Optional Add-Ins:

  • Sautéed mushrooms

  • Peas or spinach

  • Dash of hot sauce


Instructions

1. Cook the Beef & Aromatics:

  • Preheat oven to 375°F (190°C).

  • In a skillet, brown ground beef over medium heat. Drain excess fat.

  • Add onion and garlic; sauté until soft (~5 mins).

2. Make the Stroganoff Sauce:

  • Stir in mushroom soup, sour cream, Worcestershire, paprika, salt, and pepper. Simmer 2–3 mins.

3. Combine with Pasta:

  • Fold in cooked noodles until evenly coated. Transfer to a greased 9×13-inch baking dish.

  • Top with cheddar and Parmesan cheeses.

4. Add the Crunchy Topping:

  • Mix melted butter with panko; sprinkle over the cheese layer.

5. Bake & Serve:

  • Bake 20–25 mins until bubbly and golden.

  • Garnish with parsley and let rest 5 mins before serving.


Tips & Variations

  • Homemade Soup Sub: Sauté 8oz mushrooms + 2 tbsp flour + 1 cup broth + ½ cup cream.

  • Lighter Version: Use ground turkey, low-fat sour cream, and skip the breadcrumbs.

  • Meal Prep: Assemble ahead and refrigerate (add 10 mins baking time).

Pair with: A crisp green salad or roasted veggies!
