Ingredients (Makes 12 mini quiches)
Filling:

200g (7 oz) ground sausage (mild or spicy)

1 cup (60g) fresh spinach, chopped

1 bell pepper (any color), finely diced

½ cup (50g) shredded cheese (cheddar, Swiss, or feta)

2 green onions, sliced (optional)
Egg Mixture:

4 large eggs

½ cup (120ml) milk (or heavy cream for richness)

¼ tsp salt

¼ tsp black pepper
-
½ tsp garlic powder
Crust (Optional):

12 pre-made mini tart shells OR
-
1 sheet puff pastry, cut into circles
Instructions
1. Prep & Preheat

Preheat oven to 375°F (190°C).

Grease a 12-cup muffin tin (if crustless) or line with tart shells.
2. Cook the Filling

Brown sausage in a skillet over medium heat (5 mins). Drain excess fat.

Add bell pepper, sauté 2 mins. Stir in spinach until wilted. Let cool slightly.
3. Assemble

Divide filling among cups. Top with cheese.

Whisk eggs, milk, and spices. Pour over filling (¾ full).
4. Bake

18–22 minutes until eggs are set and edges are golden.

Cool 5 mins before removing.
