Nutella Thumbprint Cookies

Buttery, soft, and filled with gooey Nutella—these melt-in-your-mouth cookies are impossible to resist!

Prep Time: 15 mins | Cook Time: 12 mins | Total Time: 27 mins
Makes: 18-20 cookies

Ingredients:

  • 1 cup (125g) all-purpose flour

  • ½ cup (60g) almond flour (or substitute with more all-purpose flour)

  • ½ cup (115g) unsalted butter, softened

  • ⅓ cup (65g) granulated sugar

  • 1 large egg yolk

  • 1 tsp vanilla extract

  • ¼ tsp salt

  • ½ cup Nutella (for filling)

  • Powdered sugar (optional, for dusting)


Instructions:

1. Preheat & Prep

  • Preheat oven to 350°F (175°C).

  • Line a baking sheet with parchment paper.

2. Make the Dough

  • In a bowl, beat softened butter and sugar until creamy.

  • Mix in egg yolk and vanilla.

  • Gently fold in flour, almond flour, and salt until just combined (don’t overmix).

3. Shape the Cookies

  • Roll dough into 1-inch balls and place on the baking sheet.

  • Use your thumb or a teaspoon to press a well into the center of each.

4. Fill with Nutella

  • Spoon ½ tsp Nutella into each indentation (or pipe for neatness).

5. Bake & Cool

  • Bake for 10-12 minutes, until edges are lightly golden.

  • Let cool 5 minutes on the tray, then transfer to a rack.

  • Dust with powdered sugar if desired.


Tips for Perfection:

✔ Soft dough? Chill for 15 mins before baking for cleaner edges.
✔ Extra crunch? Add 1 tbsp crushed hazelnuts to the dough.
✔ Storage: Keep in an airtight container for up to 5 days.
