Creamy Chicken & Mushroom Pasta 🍝✨
A luxurious, velvety pasta dish ready in 20 minutes—perfect for weeknight indulgence!
Ingredients (Serves 2–3)

225g pasta (fettuccine, penne, or tagliatelle)

2 chicken breasts, cubed (or 2 cups cooked chicken)

250g mushrooms, sliced (cremini or button)

125ml (½ cup) sour cream (or crème fraîche)

125ml (½ cup) grated Parmesan + extra for garnish

1 tbsp olive oil
-
2 garlic cloves, minced
-
1 tsp thyme (or Italian seasoning)

Salt & pepper to taste

60ml (¼ cup) pasta water (for sauce consistency)
Instructions
1. Cook Pasta

Boil pasta in salted water until al dente. Reserve ¼ cup pasta water, then drain.
2. Sauté Chicken & Mushrooms

Heat olive oil in a large skillet over medium-high heat.

Add chicken, season with salt/pepper, and cook until golden (~5 mins). Remove and set aside.

In the same skillet, sauté mushrooms until browned (~4 mins). Add garlic and thyme, cook 1 minute.
3. Make the Sauce

Reduce heat to low. Stir in sour cream and Parmesan until melted.

Add pasta water as needed to thin the sauce.
4. Combine & Serve

Toss cooked pasta and chicken into the sauce. Garnish with extra Parmesan and black pepper.
