Homemade Egg Noodles 🍜✨

Just 5 ingredients for silky, tender noodles—perfect for soups, stews, or buttery garlic tosses!


Ingredients

  • 1 large egg

  • 2 egg yolks (extra richness!)

  • 3 tbsp cold water

  • 1 tsp salt

  • 2 cups all-purpose flour (+ extra for dusting)


Instructions

1. Make the Dough

  1. In a bowl, whisk whole egg, yolks, water, and salt until smooth.

  2. Gradually add flour, stirring until a shaggy dough forms.

  3. Knead on a floured surface for 5–7 mins until smooth and elastic. Wrap in plastic; rest 30 mins.

2. Roll & Cut

  1. Divide dough into 4 pieces. Roll each paper-thin (⅛-inch or 3mm) on a floured surface.

  2. For long noodles: Fold rolled dough like a letter, slice into strips (¼-inch for fettuccine, thinner for tagliatelle).

  3. For rustic cuts: Roll loosely, slice irregularly for “pappardelle” style.

3. Cook or Store

  • Fresh: Boil in salted water for 2–3 mins until al dente.

  • To dry: Hang on a rack for 2+ hours, then store airtight for up to 1 week.

  • Flour well to prevent sticking while rolling.

  • Freeze: Lay uncut noodles on parchment, freeze flat, then bag for 3 months.

  • Serve with: Chicken soup, brown butter sage sauce, or creamy Alfredo!
