Honey Mustard Chicken

šŸÆ Honey Mustard Chicken

Ingredients:

  • 4Ā boneless, skinless chicken breastsĀ (or thighs)
  • ¼ cupĀ Dijon mustard
  • ¼ cupĀ honey
  • 2 tbspĀ olive oil
  • 2 clovesĀ garlic, minced
  • 1 tbspĀ apple cider vinegarĀ (or lemon juice)
  • 1 tspĀ paprika
  • ½ tspĀ salt
  • ½ tspĀ black pepper
  • ½ tspĀ dried thymeĀ (optional)

Instructions:

  1. Marinate Chicken – In a bowl, whisk together mustard, honey, olive oil, garlic, vinegar, paprika, salt, pepper, and thyme.
  2. Coat Chicken – Place chicken in a dish or resealable bag, pour marinade over it, and coat well. Marinate forĀ at least 30 minutesĀ (or up to 4 hours for more flavor).
  3. Cook – Preheat oven toĀ 375°F (190°C).
    • Skillet Method:Ā Sear chicken in an oven-safe skillet for 3-4 mins per side, then bake forĀ 15-20 minsĀ until internal temp reachesĀ 165°F (74°C).
    • Bake Only:Ā Place chicken on a lined baking sheet and bake forĀ 20-25 mins, basting halfway.
  4. Broil (Optional) – For extra caramelization, broil for 1-2 mins at the end.

🌿 Roasted Asparagus with Cheese

Ingredients:

  • 1 bunchĀ asparagus, trimmed
  • 1 tbspĀ olive oil
  • ½ tspĀ garlic powder
  • ½ tspĀ salt
  • ¼ tspĀ black pepper
  • ¼ cupĀ shredded ParmesanĀ (or mozzarella, feta)
  • Lemon zestĀ (optional)

Instructions:

  1. Prep Asparagus – Toss asparagus with olive oil, garlic powder, salt, and pepper.
  2. Roast – Spread on a baking sheet and roast atĀ 375°F (190°C)Ā forĀ 12-15 minsĀ until tender.
  3. Add Cheese – Sprinkle cheese over asparagus in the last 2-3 mins of baking.
