Homemade McGriddle Muffins

McGriddle Muffins Recipe—fluffy, slightly sweet, and infused with maple goodness, just like the classic McDonald’s McGriddle! Perfect for breakfast sandwiches or on their own. Save this one—it’s a game-changer! 🍁🍳


Homemade McGriddle Muffins

(Just Like McDonald’s!)

Ingredients:

Dry Ingredients:

  • 2 cups all-purpose flour

  • ¼ cup sugar

  • 1 tbsp baking powder

  • ½ tsp salt

Wet Ingredients:

  • ½ cup buttermilk (or sub ½ cup milk + ½ tbsp lemon juice)

  • ½ cup milk

  • 2 large eggs

  • ¼ cup melted butter (or vegetable oil)

  • 1 tsp vanilla extract (optional but yummy)

Maple “Pockets” (Key Step!):

  • ¼ cup pure maple syrup (freeze in small dots on parchment paper—see instructions below)

Instructions:

  1. Prep Maple Dots:

    • Drop ½ tsp portions of maple syrup onto a parchment-lined tray. Freeze for 30+ mins (these will melt into gooey pockets while baking).

  2. Make Batter:

    • Whisk dry ingredients in a bowl.

    • In another bowl, mix buttermilk, milk, eggs, melted butter, and vanilla.

    • Gently fold wet into dry—don’t overmix (lumpy batter = fluffy muffins).

  3. Assemble:

    • Fill greased muffin tins halfway with batter.

    • Press 2–3 frozen maple dots into each. Cover with more batter (¾ full).

  4. Bake:

    • At 375°F (190°C) for 15–18 mins, until golden and a toothpick comes out clean.

  5. Serve:

    • Split warm muffins and add scrambled eggs, cheese, and sausage/bacon for the ultimate McGriddle sandwich!

Pro Tip: For extra maple flavor, brush baked muffins with a little melted butter + maple syrup.
