Coconut sticks absolutely delicious

Crispy & Chewy Coconut Sticks

Makes: 20–24 sticks
Prep Time: 10 minutes
Bake Time: 10–12 minutes

Ingredients:

  • 1 ½ cups (150g) shredded coconut (unsweetened or sweetened)

  • ½ cup (100g) granulated sugar

  • ½ cup (115g) butter, melted

  • 1 egg white (or 1 whole egg for a softer texture)

  • 1 tsp vanilla extract

  • ¼ tsp salt

(Optional: Add 1 tbsp flour for extra binding or ½ tsp cardamom for a Swedish twist!)

Instructions:

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. Mix ingredients: In a bowl, combine shredded coconut, sugar, melted butter, egg white, vanilla, and salt. Stir until sticky and well-blended.

  3. Shape sticks:

    • Option 1 (Crispy): Roll teaspoon-sized portions into thin logs (~3 inches long).

    • Option 2 (Chewy bars): Press the mixture into a lined baking pan (8×8″), then cut into sticks after baking.

  4. Bake for 10–12 minutes until golden at the edges.

  5. Cool completely—they’ll crisp up as they cool!

Serving Ideas:

  • Dunk in dark chocolate for an extra treat.

  • Sprinkle with flaky salt before baking.

  • Serve with coffee or as a dessert topping.
