Swedish Apple Cake (Äppelkaka)

Ingredients:

3–4 medium apples (peeled, cored, and sliced)

1 ½ cups (190g) all-purpose flour

1 tsp baking powder

½ tsp ground cinnamon (plus extra for apples)

¼ tsp salt

½ cup (115g) unsalted butter, softened

¾ cup (150g) granulated sugar

2 large eggs
-
1 tsp vanilla extract
-
¼ cup (60ml) milk

1 tbsp demerara or pearl sugar (for topping, optional)
Instructions:

Preheat oven to 350°F (175°C). Grease a 9-inch (23 cm) round or square baking pan.

Prepare apples: Toss sliced apples with a little cinnamon (optional). Set aside.

Make batter: In a bowl, whisk flour, baking powder, cinnamon, and salt.

Cream butter & sugar: Beat butter and sugar until fluffy. Add eggs one at a time, then vanilla.

Combine: Alternately mix in flour mixture and milk until just combined.

Assemble: Spread half the batter in the pan. Arrange half the apples on top. Repeat with remaining batter and apples. Sprinkle with demerara sugar (if using).

Bake: 40–50 minutes, until golden and a toothpick comes out clean.

Cool slightly before serving. Enjoy warm with vanilla sauce (vaniljsås), whipped cream, or ice cream!
Variations:

Add chopped almonds or cardamom for extra flavor.

For a crumble topping, mix ¼ cup flour, 2 tbsp sugar, 2 tbsp butter, and ½ tsp cinnamon; sprinkle before baking.
