Almond Croissant Blondies 🥐🍯

Buttery, chewy blondies with the rich flavor of almond croissants—golden edges, a tender crumb, and a hint of caramelized sweetness!

Prep Time: 10 mins | Bake Time: 25-30 mins | Total Time: 40 mins (+ cooling)
Servings: 12-16 squares


Ingredients

For the Blondie Base:

  • 1 cup (226g) unsalted butter, melted

  • 1½ cups (300g) light brown sugar, packed

  • 2 large eggs, room temperature

  • 1 tsp vanilla extract

  • 1 tsp almond extract

  • 2 cups (250g) all-purpose flour

  • ½ tsp salt

For the Almond Croissant Swirl:

  • ¼ cup (50g) granulated sugar

  • 2 tbsp (30g) unsalted butter, softened

  • ½ cup (50g) almond flour

  • 1 tbsp (15ml) amaretto or ½ tsp almond extract

  • ¼ tsp cinnamon

For Topping (Optional):

  • Sliced almonds

  • Powdered sugar


Instructions

1. Prep & Preheat

  • Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.

2. Make the Blondie Batter

  1. Whisk melted butter and brown sugar until smooth.

  2. Add eggs, vanilla, and almond extract; mix well.

  3. Fold in flour and salt until just combined (don’t overmix).

3. Create the Almond Swirl

  1. In a small bowl, mash together sugar, softened butter, almond flour, amaretto, and cinnamon into a paste.

4. Layer & Swirl

  1. Spread ⅔ of the blondie batter into the pan.

  2. Dot with almond paste, then swirl with a knife.

  3. Top with remaining batter and extra almond swirl.

5. Bake & Cool

  • Bake 25-30 mins until golden and set (toothpick should have a few moist crumbs).

  • Cool 1 hour before slicing. Sprinkle with powdered sugar and sliced almonds.
