🍗 Slow Cooker Million Dollar Chicken

Ingredients:
- 2 lbs boneless, skinless chicken breasts or thighs
- 8 oz cream cheese, softened
- 1 cup sour cream (or Greek yogurt)
- 1 (10.5 oz) can cream of chicken soup (or mushroom)
- ½ cup chicken broth
- 1 packet ranch seasoning mix (or 2 tbsp homemade ranch seasoning)
- 1 cup shredded cheddar cheese
- 6 slices cooked bacon, crumbled (or ½ cup real bacon bits)
- 1 sleeve Ritz crackers, crushed (about 30 crackers)
- ¼ cup melted butter
- 2 tbsp chopped fresh parsley (optional, for garnish)
Instructions:
- Prep the slow cooker:
- Lightly grease the crockpot or use a liner for easy cleanup.
- Layer the chicken:
- Place chicken at the bottom of the slow cooker. Season with salt & pepper.
- Make the creamy sauce:
- In a bowl, mix cream cheese, sour cream, cream of chicken soup, broth, and ranch seasoning until smooth.
- Pour over the chicken, spreading evenly.
- Cook:
- Cover and cook on LOW for 4-6 hours or HIGH for 2-3 hours, until chicken is tender.
- Add cheese & bacon:
- Shred the chicken lightly with forks (or leave whole).
- Sprinkle cheddar cheese and bacon on top.
- Add the buttery cracker topping:
- Mix crushed Ritz crackers with melted butter, then sprinkle over the cheese.
- Cover and cook on HIGH for 15-20 mins to crisp the topping (or broil in the oven for 3-5 mins if your slow cooker has a removable pot).
- Garnish & serve:
- Sprinkle with fresh parsley and serve over rice, mashed potatoes, or noodles.
