📝 Ingredients:

🐔 For the Chicken Filling:

  • 2 tablespoons olive oil
  • 1 lb (450g) boneless, skinless chicken breasts or thighs – cut into small strips or cubes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon cumin
  • Salt and black pepper to taste
  • 1 tablespoon lime juice (optional, for brightness)

🌶️ For the Veggies:

  • 1 tablespoon olive oil
  • 1 red bell pepper – thinly sliced
  • 1 green bell pepper – thinly sliced
  • 1 small red onion – thinly sliced

🧀 For Assembly:

  • Large flour tortillas (8-10 inch)
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a Mexican blend)
  • ½ cup ranch dressing (homemade or store-bought)
  • 1 cup cooked rice (optional)
  • ½ cup sour cream (optional)
  • Fresh cilantro or green onions (optional, for garnish)

🔥 Instructions:

1. Cook the Chicken:

  1. Heat 2 tbsp olive oil in a large skillet over medium-high heat.
  2. Add the chicken pieces. Sprinkle with garlic powder, onion powder, smoked paprika, cumin, salt, and pepper.
  3. Cook for 6–8 minutes, stirring occasionally, until chicken is golden and fully cooked.
  4. Optional: Add a squeeze of lime juice at the end for a fresh touch.
  5. Remove from heat and set aside.

2. Sauté the Peppers & Onion:

  1. In the same pan, add 1 tbsp olive oil if needed.
  2. Toss in sliced bell peppers and red onion.
  3. Cook over medium-high heat for about 5–6 minutes, until slightly softened and slightly charred.
  4. Remove from heat and set aside.

3. Warm the Tortillas:

  • Warm tortillas on a dry skillet or in the microwave for 20–30 seconds so they’re flexible and easier to roll.

4. Assemble the Burritos:

For each tortilla:

  1. Layer a few spoonfuls of chicken.
  2. Add some sautéed peppers and onions.
  3. Sprinkle a generous handful of cheese.
  4. Add a spoonful of rice (optional).
  5. Drizzle with ranch dressing.
  6. Add sour cream or chopped cilantro if using.

5. Fold the Burritos:

  1. Fold in the sides of the tortilla.
  2. Roll up tightly from the bottom.
  3. Optional: Place seam-side down in a dry skillet and toast each side for 1–2 minutes for extra crunch.
