Ingredients:

For the Cake:

  • 3 cupsĀ all-purpose flour
  • 1 tbspĀ lemon zestĀ (2-3 lemons)
  • 1 tspĀ baking powder
  • ½ tspĀ baking soda
  • ½ tspĀ salt
  • 1 cupĀ unsalted butter, softened
  • 2 cupsĀ granulated sugar
  • 4Ā large eggs, room temp
  • 1 tspĀ vanilla extract
  • ½ cupĀ sour creamĀ (or Greek yogurt)
  • ½ cupĀ whole milk
  • ¼ cupĀ fresh lemon juice
  • 1½ cupsĀ fresh raspberriesĀ (tossed in 1 tbsp flour)

For the Lemon Glaze:

  • 2 cupsĀ powdered sugar
  • 3-4 tbspĀ fresh lemon juice
  • 1 tspĀ lemon zest
  • Pastel sprinklesĀ (for decorating)

1. Make the Cake:

2. Glaze & Decorate:

1ļøāƒ£Ā Whisk Glaze:Ā Mix powdered sugar, lemon juice, and zest until smooth (add more juice if too thick).
2ļøāƒ£Ā Drizzle:Ā Pour glaze over cooled cake. Immediately addĀ pastel sprinklesĀ before glaze sets.
